March 3

So! Yesterday I had an extremely lazy day. I barely moved for hours, and I sat inside all day long, with blankets over the windows so that our dorm was extra dark...

Combined with the hours of extreme relaxation, I got over 12 hours of sleep total yesterday, and by the time I woke up this morning, I had so much energy it was ridiculous.

I usually don't get nearly enough sleep at night... Running on 4-6 hours of sleep per night is kind of my (admittedly unhealthy) thing, so getting that much sleep is a big deal for me.

The rest of the freshmen had already decided to use this snow day to have another movie marathon, and to stay in the dorm all day again... I knew from the moment I hopped out of bed that that was not an option for me.

So, first things first I went outside.

We got a TON of snow, probably four inches or more total. It's hard to tell in any of these pictures, especially since a road crew has been out all day cleaning off the roads and sidewalks of campus, but trust me I am not exaggerating!

Anyway, I left the dorm and tried to go to Starbucks... unfortunately apparently whenever we don't have class, we also don't have Starbucks, so I was out of luck.

I was still majorly craving coffee and sweets though, so I ended up having some and then decided that the thing I wanted to do with my off day was bake chocolate chip cookies.

So, I did!
I spent probably 3 or 4 hours just baking downstairs in the dorm kitchen, until I made literally 157 cookies (I counted).

These are the same cookies that I've mentioned making at least five different times on this blog, but for whatever reason, today these cookies turned out extra good...

So, of course, I had to share them. First, I made a big plate for my roommates and the soccer girls in our room watching movies, then I delivered more to the soccer girls that live in the same dorm complex, and finally I just headed over to Cartmell with the rest.

Everyone that ate these ones loved them, including myself... It's funny because I keep posting paleo meals, then I decide to spend a day drinking coffee and baking a ridiculous about of cookies... which of course leads to eating a ridiculous amount of these cookies.

I probably ate about 25 of them total today. Oops!

Granted, I know that Lent is just around the corner, and I'm trying to take advantage of the few days I have left before I have to completely give up sweets (and bread and grains and dairy).

So I guess really this was my last hurrah of baking. Good thing they turned out so well!

About the pictures real quick though... for some reason I took an ingredient picture with three eggs in it, but really I only used two.
Just thought I'd mention it, anyway here's a close up of the product... 157 of these little balls of deliciousness!

Good thing all I ate today was coffee and cookies until dinnertime! ...And then I ate Wingspan...

I lost all track of time while hanging out with a few of my friends, and it got to be past 9:00 before I realized how hungry I was, and by that time Alumni had been closed for over an hour (and cooking didn't sound fun).

Still, I'm stuck on going Paleo (and sticking to it hopefully) once Lent actually starts!
